Chocolate Maple Muffins

Postby Mickeyz » April 28th, 2007, 5:20 pm

Hi Everyone

OK, I'm kinda new at this Medifast cooking but I was having a rough day and really needed something sweet. I looked around at muffin recipes and many call for MF eggs, which I didn't have. I used a couple egg whites, so I guess if I count them as part of my lean I am OK??? It would be one egg white per meal.

Does this look compliant?

Here is what I came up with and they were really yummy.

1 pkg maple brown sugar oatmeal
1 pkg Chai
1/2 teas pumpkin pie spice
combine DaVinci pancake syrup and choc syrup to make 1/3 cup
2 egg whites
1/4 teas vanilla

Spray a muffin pan with butter flavored Pam and make 4 muffins. Sprinkle a little cinn on top and cook at 350 for 12-15 min until a toothpick comes out clean.

2 muffins makes a meal.

Someone that has the eggs should try it that way. Let me know how it works out since I will be ordering eggs next time.

DUH! I guess it would help if you had all the ingredients.

I left out
1/2 teas baking soda
1/4 teas baking powder

And of course those are SF syrups!

Yes I made them and they were yummy. A little maple extract in them may be good too.

I needed something sweet, so better than a Snickers bar. Or I should say better CHOICE than a Snickers bar. (Before MF I always considered Snickers bars to be a food group! )

I'm going to have to change mine too and take off my favorite snack Chefboyardee Ravioli, straight outta the can.
