I bought a pound of ground chicken.....

any ideas on what to do with it for dinner? :bib:

Fry it with PAM in a skillet with Mexican spices and make a taco salad with salsa? (I am half-Mexican-can you tell?) Arriba!

Chicken patties (YUM)
Also AChicken Meatloaf (make it all the time) Just do not use the Bread Crumbs. I also use egg beaters in it.

I do lots of meat and veggie dishes. I cook the sliced veggies ina skillet with a bit of olive oil spray and then add the meat to it. Sometimes I add a low calorie marinara or a stir fry powder. Tasty stuff.

You could also do the meatloaf thing using a measured amount of egg (2 eggs is one protein), and a package of Medicrackers ground up helps to hold it together.

So here is what I did...

mixed 1/2c egg beaters with the chicken. added some chili powder, a little choppped onion, some garlic pepper and 2 TBS of salsa.

sprayed a baking dish with pam... divided the chicken into 4 patties, topped with some more salsa and baked @375 for abou 25 minutes....

it was wonderful. hubby said it was a "make it again" :mrgreen:

chicken patties

Hi,
I wanted to find a way to disguise or get rid of that yucky cream of tomato soup so I mixed it dry with ground chicken, a little dried onion, and a few teaspoons of salsa and sprayed a non-stick pan with vegetable spray and sauted them. They have a really good taste. The cream of tomato soup acts as a substitute for bread crumbs, and yippee - one less packet of cream of tomato soup!!
