veggies, and exercise

I am restarting today, after over a month of being off plan.. I haven't exercised since last summer, but today I really feel like I want to knock out a few kilometres on the recumbant bike.. is it really horrible if I don't wait the 3 weeks to exercise? What exactly is the problem it will cause?

Also, does anyone have an easy conversion sort of thing for the veggies from cups to weight? I find a am very liberal with 1 cup because it's often hard to measure exactly so I'm looking for a stricter way of measuring.

You can't convert cups to weight because different vegetables weigh differently. Zucchini, for instance, is much heavier than mushrooms, so a cup of zucchini would weigh quite a bit more than a cup of mushrooms. Or lettuce.

I would not recommend starting your exercise just yet. The problem is your body is adjusting to a drastically lower level of calories and you're likely to do more harm than good by pushing it.

Yeah, I understand that 1 cup is going to vary greatly between veggies.. I just hoped someone had a nice list already made out.. I'm sure the info is out there on the internet and I can make my own list.

Thing is, there is a difference between 1c shredded zucchini and 1c sliced zucchini, for example, you just can't pack it in there the same way because of the shape. And I tend to have more rather than less to make up the difference. :?

True. But my personal feeling, which may not be the "party line," is if you end up eating a little extra zucchini or lettuce that way, it's not the end of the world. If you shred it rather than slice it, say, you'll probably end up with - what? - 15 or 20 extra calories? And GOOD calories.

When I was on the program, I figured I didn't get fat eating too much broccoli and zucchini, so if I didn't measure quite right and wound up eating an extra quarter- or half-cup, it wasn't a tragedy.

Dogma made the perfect point. Its not the little extra bit of green that is going to break you, its the extra ounces of meat, or the extra snacks, or that extra something else.
I wouldn't stress over a little extra zucchini or a couple more green beans.

The reason they suggest that you don't work out in the first few weeks is to allow your body to adjust to the lower calorie intake. Depending on how you ate while you were off plan for a month, you may be able to get away with some exercise sooner than otherwise. For example, if you were eating 2000 calories a day and not working out at all, it would be best to wait, but if you were only eating 1200 and getting some activity then you probably don't have to wait as long.
