A quick dinner... and get the heck out of the kitchen !!!

Today was a very busy day, lots of errands, a couple friends stopping over and I had beeper coverage for work. It's dinner time and I realized that I hadn't taken anything out of the freezer. A small amount of panic starts to creep in and I take a look in the pantry cupboards for salvation. I spy a 5oz can of chicken breast and think of the veggies that I have on hand. I diced up a green pepper and add it to the chicken with a dollop of lite mayo. Added a sliced cucumber and a tall glass of Raspberry selter and voila ! Dinner.

I'm full now and can't wait for Sunday roll call.

The avatar pic is from my last deployment to the Middle East in 2003. I spent a year driving patrol boats escorting supply ships going in and out of the Persian Gulf. I have about 17 years in the Navy, 9 active, the rest in the reserves. The boats are fun to drive but the deployment wasn't the most fun that I've ever had. I gained quite a bit of weight over there because we were eating a lot of MREs and it was tough to exercise considering our mission profile. Not a lot of room to run laps on a 27' patrol boat LOL!

So far as the mayo goes, the lite mayo doesn't have much of anything in it, glorified paste to hold everything together.

It's nights like that when I'm SO glad for Medifast. I just turn it into a full-plan day and make a bowl of Medi-soup.
