question about oatmeal cookies

Postby elines » March 8th, 2007, 11:22 am

Question on making the oatmeal cookies can I make them in advance? If I can how long can I keep them? Do they, should they be refrigerated?

I have them every day!!! YUMMO!! I make usually 3 or 4 batches at a time and put them in a ziplock, but I wouldn't make many more than that. They are simple to make so its not like it takes that much time, and no refrigeration needed!

Do you have Apple Cinnamon Oatmeal? If so it is on the side of that box, but here it is in a nut shell

1 packet of Oatmeal
2 tsp. splenda
1/8 tsp of baking powder
1/8 tsp. of cinnamon(for the non apple cinnamon) For the apple cinnamon 1/4 tsp.
1/2 tsp. vanilla extract
1/4 cup of water.
preheat oven to 350 degrees

take a tablespoon and make 4 cookies with tablespoon put in oven for 10 minutes. Take out and spray ICBNB on tops and let cool.

I have started making cookies from all the oatmeal flavors, since I don't like it otherwise (love regular oatmeal, but the texture of MF oatmeal always seems "off")

I use the same basic recipe - less water is better - you just want it to hold together (unless you do want pancakes, which can also be good). I also sprinkle the cinammon over the top of the cookie rather than mix in - more cinammon flavor that way.

I also bake mine for about 20 minutes - makes them a little firmer and chewier. Store in baggies - I make 3 -4 batches at a time.

Also love the "chocolate pies" from the recipe section! Have also made "lemon" by adding lemon extract to the vanilla pudding - good with a blueberry crust.
