Tomato Basil Concasse L & G Recipe

Hi guys, just got this in my e-mail from the official MF site, thinking about trying it, sounds yummy! You guys know I'm not real adventurous when it comes to L & G, but I'm going to try it...Simple and light and yummy!

Tomato Basil Concasse Lean & Green Meal
1/2 cups tomato seeded and chopped
2 teaspoons extra virgin olive oil
1 teaspoon red wine vinegar
1/3 cup chopped basil leaves
1 cup spinach
3/4 cup low fat mozzarella cheese

Combine the tomatoes, oil, vinegar, basil and salt and pepper to taste. Add to spinach and mix with cheese.
Age: 37 Ht: 5'10"

Funny that you should mention that! I was just eyeing an almost identical recipe on the back of a package of Sargento Deli Swiss Light cheese and wondering if it would be lean and green - I guess so then!

I got that e-mail today, too. It sounds interesting. I would probably make some and freeze it for soup on the go when I feel like having soup and not a powdered one. If you try, please spill the details!
