Sweet potatoes???

Postby HappyHomeMaker » July 11th, 2007, 11:31 am

Ok I know this is gonna sound wierd, but we eat wierd in this house...

What about sweet potatoes...My hubby and son love them...I do too. I will actually make them for a meal.

I baked one today for my son for lunch. Yes! I do consider a sweet potatoe a meal...I know , I know...but I also consider home made hummus with fresh bread a meal. I told you we eat wierd.

I know regular potatoes are off limits, due to the carbs, but sweet potatoes are high in vitamin c and fiber.

so what d'ya say???

also summer squash?? can you tell we farm?? :)
God Bless,
Laura

Yeah, those are both meals to me, too. Or were, in the old days. Now, neither one is balanced enough for me to eat as a meal.

But sadly, no sweet potatoes till maintenance.

Hi Laura,
As you see, no potatoes of any variety (whatever the quick start guide has on it are the only veggies allowed...).
As for the squash, I have a couple recipes in Lean Cuisine... and others have some too.

Here are links to a couple of my creations... enjoy!

By the way, one of Di's favorite creations involves Apples and Yams or Sweet Potatoes (she will be able to have once again in maintenance-land)
