"fake" mashed potatoes

Postby BettinaV » September 9th, 2006, 11:40 am

Hi all, I know this has already been up on the post somewhere in the past. But for all the new people and people who are having troubles with their L&G or missing potatoes....

Last night I pureed some steamed cauliflower in the food processor with a little ICBINB, nutmeg and garlic powder. Honestly it really is pretty close to mashed spuds and really yummy way not to miss them.

It's one of the things I'm doing for myself and my two Atkins friends on Turkey day...I'm also working on legal green bean casserole!
We'll see!
