Thanks, Biki! You are very determined as well....AND in Onderland! Yay, you!

So ~ I just got off the treadmill and need to go get ready for school. Human Development (Aging) and Forensic Psychology today. Should be interesting. The prof for the aging class is one with whom I've already had two classes, so I know I'll enjoy that one. The prof for the forensic psych class is someone with whom I've had the briefest working acquaintance with over several years, but he's a very good friend of DH's. They've known each other for 30 years or more. He works for the local PD, providing psych services in all different areas from evaluations of prospective officers to providing counseling services to officers involved in shootings to expert witness testimony, etc. He's a cool guy too, so the class should be really interesting. I'm very much looking forward to it.

SOJI!, I was just looking back through your journal to find that post, and lo & behold, Jo said what I had been thinking.
Anyway, I don't think I told you, but I had already printed off the post and put it in the book I was
reading to remind me to read it again and again!
Because as you know, visualizing success works in many other areas of our lives.
I have also mentioned it in several posts to others whom I thought it would benefit. It sure did me!

Wow...I guess I'm a holiday gal...the last time I posted in my own journal was Valentine's Day and here it is St. Paddy's already. LOL

Lizabette ~ I am so pleased that something penned by me would benefit you! That's gooder'n grits! I'm just sorry that it took me so long to tell you so!

Chynna ~ guess what I just ate? Yummy scrambled eggs! You were SO right! A little salt, pepper, and garlic powder made them quite tasty. I was just about to post about them when I saw your question...you have great timing!

Well, I'm off to see my nephew/godson who is on leave from Iraq. I'm so excited to see him. He (Lucas) is a medic and is doing a great job over there - saving lives and easing suffering. Despite my feelings about this war, I'm extremely proud of the amazing courage he possesses and his healthcare skills, too.

As recently as a couple of weeks ago he watched as his sergeant was shot in the head, and then provided lifesaving medical assistance to him - all while under heavy enemy fire. The sergeant survived with a metal plate in his head, complete hearing loss in his left ear, and permanent nerve damage on the left side of his face. His cognition was completely unaffected. Lucky guy, huh? Lucas and a couple of the other soldiers involved have been nominated (?, not sure of the process) for the Bronze Star.

Hey girl...SEE i told'ja...lol! I'm happy you love them..i am going to order more boxes than usual with my next product order.

I am so PROUD of your nephew/godson also, even tho i don't know him personally...and what COURAGE he has along with all the rest of those young men and women trying so hard to endure that AWFUL war, and for him to have worked on and help "save" his own sergeant's life is a TRUE mark of a "dedicated" medic working in such a TUMULTUOUS situation..God bless them "all".

ChynnaDoll ~ thank you SO much! I had a wonderful visit with Lucas. I also got to see his siblings (they live in AZ), including his sister’s new baby who was born in Dec. He’s beautiful!

NSV—while on this visit (to my hometown), I took all of the kids out for dinner. Uhm, yeah. To the best Mexican restaurant in the history of the world!! It’s always a given that whenever Aunt Sandy’s in town we go to Sal’s. Usually, Aunt Sandy has one chicken enchilada, one shredded beef taco, rice and beans, guacamole, flour tortillas, at least one basket of chips with salsa, and a couple of margaritas. Not this time, my friends! Aunt Sandy was SO good! I had chicken grilled with ICBINB and a side salad with a little salsa as dressing. It was scrumptious! I went to school with the owner of this restaurant and spoke with him about how important it was to me to keep to my diet, so he personally grilled my chicken with the ICBINB spray that I’d brought with.

When I was packing my MF for the trip, DH asked why I was taking it. To which I replied, “Well…because I have to eat!” He said, “But, what’s the point? I know you’re going to Sal’s.” I explained that I did, indeed, plan to go to Sal’s, but that I had every intention of remaining compliant. He gave me a big ol’ bear hug and said that he was sooooo proud of me! Awwwww.

I must admit that when I first walked into Sal’s and got a good whiff of the place, I briefly thought about chucking my resolve and having my standard fare. It was a very brief moment though—plus, I had already told the kids to keep the chip basket away from me! They didn’t even need to. There were eight kids with me, ranging in age from 14-20. Do you know how much eight teenagers can eat?? Everything looked and smelled SO good, but I just reminded myself that the main reason we were there was to visit with each other—and that was better than any food could ever be.

Yeah, I know I’m making a big deal of remaining compliant at a restaurant. I’ve done that plenty of times before, but this was different. This was Sal’s. There are so many things tied to this place for me. Memories of my grandparents, my eldest sister taking me there for my 8th birthday – just she and I (I’m the middle child of 7, so this was a BIG thing), hanging out with high school friends after the game, stuff like that. And then there was Sal, himself. I used to date his eldest son when we were in high school, and Sal was just convinced that we were gonna’ get married (not even close :roll: ). Sal always treated me like a princess, though. I’d hang out with him in the kitchen and tell him all my problems—he was my first therapist! He truly helped me through some really tough times—and, of course, he would feed me. Sal passed away shortly after that, and whenever I’m at the restaurant, it feels as though he’s there, hovering over our table, making sure our meal is perfect. Sal’s is just home to me, y’know? I guess I associate it with all that was good in my childhood—and there was precious little of that.

Wow. All of this just came rushing out. To you, this means I was compliant in a restaurant. WooHoo. To me, it means…well…OMG, it was Sal’s!!

Sojo, I love reading your posts and I enjoyed this one alot. You painted a wonderful picture of dinner at Sal's, I could visualize it :D. Congratulations for staying compliant and for all the thought you put into making your dinner a L & G that was within the guidelines. That isn't easy when away from home and especially wouldn't be easy when at someplace so special to you as Sal's is (in the foods, the surroundings and with the company you were dining with). It sounds like a very fun time and you sound like an extremely special Aunt Sandy! Your nieces and nephews are pretty darn lucky! :)

WOW Sojo...this has just put the icing on the cake for "compliance" as far as i'm concerned. YOU just gave me "hope" for my upcoming outting this Sunday with my church at the "Golden Corral"..lol! Have you heard of it?..BOOOKOO' buffet choices, but i KNOW i can do it and stay compliant...this will be a true test for me:+)

Sojo- I keep meaning to ask you how your MBT's are working out. I can really feel the difference if I have been walking over a mile but automatically sense the off balance thing. The are very hard to wear on crowded escalators. I felt like a Weeble Wobble....

Thanks for the kudos! Coming from someone who loves Mexican food nearly as much as I do, that means a lot!

Biki ~ being prepared is always easier than trying to scramble for solutions, huh? I mean, that can be empowering, too...coming up with creative ways to get through certain situations, but being prepared circumvents the need for all of that.

Tawanda ~ thanks for all the sweet things you said! I like to think that I am a good auntie! Because I don't have kids of my own (by choice), I spoil my nieces and nephews at every opportunity. I always have 3 or 4 visit me on their school breaks, and they fight over whose turn it is!

Jonna ~ yikes! I'm allergic to bees! But only their stingers, not their knees! Thanks!

Chynna ~ yay! I'm glad I could give you hope! I do, in fact, know of the Golden Corral (potato bar, right?).

Oh, Biki ~ I almost forgot to talk about my MBTs! I continue to love them.
In fact, I love them more today than yesterday. 8)

I can actually feel and see my kneecaps now. There's actual definition there! Even at my thinnest, I still had quite padded (read: fat) knees, so this is really cool! I've also had knee surgery on my left knee, and the treadmill used to make it really sore afterward, even though I always wore a brace. There's no more joint soreness now, and I don't even wear the hot, uncomfortable brace anymore! Way cool.

I have not had a Weeble Wobble issue with my MBTs, but one of my friends is always losing her balance in hers. She's fine while she's moving, but standing still makes her rock backward...she's almost tumbled over on several occasions! I happen to be double-jointed, and my knees bend backward much more than the average person's. So, when I stand with my knees locked, my heels just kind of sink down and I don't actually rock backward. So, that must be it. Either that, or I am simply inordinately graceful and sure-footed. NOT!
