question about spaghetti squash

Postby hansolo » May 28th, 2005, 3:44 pm

is this permissible for the program?

I can see the benefit - having a 'pasta look-alike' for vegetable along with a lean meat (beef, chicken, whatnot).

thanks

Oh, I forgot about spag squash! I LOVE it! Christi, you cook it just like regular squash (cut in half and upside down in little water) and then "peel" it out w/ a fork. It comes out like spagetti! I used to make it w/ a little tomato sauce and tofu. It is YUMMY!

hummmmm well I'm gonna have to give that a try. I'll buy it and then get with you again about cooking it. I might have to call you on the phone and have you walk me through that tofu thing..never had that either  And I'm a really good cook...My problem is that my eating habits aren't great....and can you imagine a person with a weight problem having bad eating habits??? AMAZING I know!

I would wait till Nancy or others chime in whether its good or bad for the medifast program (unless you are on the transition or beyond stage).

I'm not sure of its' carb and starch level so hopefully nancy would share.

thanks

Ok- I checked into the nutritional information on spaghetti squash.

1 cup
42 calories
10 g carbs
2.2 g fiber
1 g protein

I do not know if this is within the criteria for using as part of our lean and green though.

Hi, Kids ~

It's moi, the Bubble Buster...

Sorry, Kids, wipe the drool from your chins…scetti squash is  too caloric and  too carby for the Green part of the Lean ‘n Green on the weight loss program.

I love it, too! It is easy to prepare baked or steamed in place of pasta and I use it for maintenance with garlic, fresh zucchini-tomato-onions-n’ ‘shroom sauce.

It gives ya someTHIN' to look forward to when you reach your goal!

oops.

Dinner last night was 1 cup of spaghetti squash with the extra-lean ground beef made into a sort of spaghetti sauce. So much for THAT recipe until maintenance....

Folks, one night of it won't harm you! I would not make it a practice o preparing and eating it. Some of you might be able to skate by and continue to lose. Some of us can't even think about it without stalling...

Compare the calories in one and a half cups of cooked green beans, broccoli, zucchini, spinach, asparagus, summer squash, etc. to the spaghetti squash...yes, it's better than corn and smashed puhtaters but IMO, it is not the best choice. It's not on the list of vegetables recommended for the 5 and 1 Program.

FYI, these veggies are A-OK.

Alfalfa Sprouts
Asparagus
Beans (Italian, Green, Waxed)
Broccoli
Cabbage
Cauliflower
Celery
Cucumber
Eggplant
Greens (collard, turnip)
Kale
Lettuce (romaine, iceberg, bib)
Mushrooms (use in moderation on top of salad)
Onions/Peppers (green) (use in moderation on top of salad)
Radishes
Spinach
Summer Squash
Tomato
Turnips
Zucchini

I have no idea how those Jamaican's make such yummy veggies. Probably loads of butter or something. But it was called curried cauliflower and also had tofu. It was hot but so yummy!

They also had awesome squash, Cho Cho (it tasted like squash) heart of palm, artichokes, lots of fresh tomatoes w/ fresh cut parmesan cheese. Oh man, it was so good! They use really different spices that I've never tasted. The jerk chicken was just to die for.

Ok...enough already - I'm drooling here!
