That is a lot of Tuna

Postby Prancer » July 17th, 2006, 2:00 pm

I had my L&G for afternoon meal 'cause somewhere today I am off by an hour and Dh had to have an earlier dinner 'cause he has practice at 6pm. Anyway I tried the recipe here for tuna patties. I think Sidrah posted it. It was pretty good considering I dont like hot tuna. Dh and I (our daughter too) liked them.

Seriously tho, 6oz of tuna is A LOT of tuna. I opened two cans and drained them expecting to get 6oz for me and a few for dh. I weighed the tuna and it took almost 2 whole cans to get 6oz. So 3 cans of tuna later we are both stuffed and our daughter now knows she likes tuna.

If you are mixing egg into the mix, then you should reduce the amount of tuna.
Since 2 eggs is a protein serving, one egg is half... so then you should use more like 4 oz of tuna with one egg or so. That way its not as much tuna. ;)

Thanks Mike. I reduced the tuna because of the egg but only used a splash of egg in my part, then dumped the rest in DH's.

Side note, my son was watching now I have to make him eggs for breakfast.

Why do you have that many cans of tuna and salmon? LOL that is a lot of canned fish. I sauteed some mushrooms at the same time with some butter spray and garlic. But because a veg serving would be a whole lotta mushrooms I also had some cucumber slices with it. I think a green salad would be good with it. I'm not one for cooked veggies.

Wow.. and I thought I liked Tuna. I grew up having a nice high carb meal with salmon patties (made with crackers, egg, and spices) macaroni and cheese, and mashed potato patties.
We liked good tasting food (not good for you food).
I'm thinking this tuna recipe would also be perfect for crab cakes (you can get real canned crab in alot of stores (and Costco and Trader Joes), or fresh crab meat. (Can you tell I like crab?)
I would do the salmon patty thing, but I think my wife has an aversion to canned salmon (childhood memories... long story... lol)
So, perhaps tuna and crab... maybe add some shrimp.. lol

I get canned crab at Trader Joe's and make crab cakes. They are great and this recipe works fine with it. My mom loved crab cake, so I tried many recipes. Atkins was good for me like that....

Also, baby shrimp comes in bags frozen ..5 oz. for 99 cents. I mix crab and shrimp and make a crab cake like filling, but put it in mushroom caps..good stuff

Canned Salmon

Postby mousehouse62 » July 19th, 2006, 12:52 pm

One of our fave things to do with salmon is
Open can.....drain well.
Add 1 lemon squeezed
Chop some fresh dill and add.
Stir in a bit of salt and perhaps a smidge of EVOO (extra Virgin Olive Oil)
Mix well and serve with a small romaine lettuce salad with chopped red and yellow peppers and a bit of tomato with 3 sliced radishes.
Of course I measure out 6-7 ounces for the DH and I each.
Happy eating.

That sounds good too. I was a bit worried when you said the juice from one lemon, but I looked it up... 1 medium lemon (whole) = 4g sugar. I'm sure that some of that is left when you juice it, so rock on. :kool:

Thanks for the tip on the lemon.....
I never thought about the sugars in a lemon....they're so sour!
I will keep that in mind for the next recipe share!
Thanks Mike!

Doesn't the recipe say ONE 6 oz. can? Hmmm I made it too and just used one can. It's only like 2.5 oz. of Tuna. So that plus one egg is perfect!

Jenn, actually you were right! It says 6 oz of tuna, not a can. I must have just thought that a can is 6 oz. so there ya go.
