Spanish Flounder

I am going to try this tonight for me & hubby. I am not overly concerned about the small amount of white wine & lemon juice, because they will burn off anyway. And of course I am adding extra veggies for me.:

Spanish Baked Flounder

Ingredients

• 2 lbs. flounder fillets
• 1 clove garlic, minced
• 2 medium tomatoes, thinly sliced
• 2 tbs. parsley
• 1 tbs. white wine
• 1/4 cup onion, chopped
• 2 tbs. lemon juice
• 1/4 cup green pepper, chopped
• 1/2 tsp. marjoram
• 2 tbs. butter or margarine (Will use butter spray)

Place fish fillets in a non-stick or greased baking dish. Arrange tomato and cucumber slices on top. In a saucepan, cook onion, green pepper, and minced garlic in butter until onion is tender, but not brown. Remove from heat. Stir in parsley, wine, lemon juice, and marjoram. Spoon over fish. Bake in 375F oven for about 25 minutes, or until fish flakes easily when tested with a fork.

I am a floundering Mexican. I hate it when they confuse that with Spanish.

Yummm! I have Oregano crusted flounder filets in the freezer. Will try this with them. My DH might like this.

Well, even with the addition of some extra salt, this was pretty bland. So I ate about 3 oz of the fish and all the veggies and then had an ounce of LF mozzarella cheese. Who knows if that was ok to do, but at least it wasn't carbs or sugar! YAY for staying in ketosis!

Lowfat cheese is an exceptable vegetarian option. I have never gone that route because the portion size (A CUP???) listed in the L& G guide seems high. I am going to check again but I think that is what is says...UPDATE: Just checked the L&G protocol on the FAQ board and it says a cup of LF cheese is an acceptable substitute. Let's see a teeny veggie burger or a WHOLE cup of cheese!!! Just seems like a lot to me. Isn't an oz of cheese a serving?

Hmmm, I'm curious too! :)

I just plugged some foods into FitDay to see what the calories were and it says:

1 cup low-fat Cheddar -- 195 Cals
1 cup low-fat Cottage Cheese (2% Milk Fat) -- 203 Cals
1 Morningstar Better'n Burger -- 91 Cals
1 Morningstar Farms Spicy Black Bean Burger -- 117 Cals
1 Green Giant Harvest Burger (veggie) -- 138 Cals
5 oz. Beef Steak, boneless, cooked -- 359 Cals
7 oz. Chicken Breast with skin, no bones -- 388 Cals
7 oz. Chicken Breast, no skin, no bones -- 317 Cals

Wow, I'm surprised to see Cheddar has less calories here than Beef ;) But there ya have it!

p.s. For those curious, 1 cup REGULAR full fat Cheddar (shredded) has 404 calories, more than any of the above. (Plus 32 grams hip-enriching Fat.)

Yeah, I'd feel weird putting 1 whole cup of low-fat cheese on my salad or whatever, but hey, I guess it's a healthy option! :D

Interesting point here though. You have to shred the cheese and measure it that way, in a measuring cup, because if you weighed out 8 oz ( a cup) of it the calories would be different.

Sometimes I make yummy stuffed portobellos- filled with garlic, onions and tomatoes, then throw 4 oz of shredded mozzarella cheese on top, bake for a bit- it is heavenly and almost feels like I cheating!

Tis true but 8 oz. weight is different than 8 oz. liquid... unless you're measuring water or something like water in form/density. (Geek mode on.)

Unfortunately:

8 oz. weight Low-fat Cheddar -- 392 Cals

Versus the shredded into 1 cup at 195 Cals ;) Boohoo!

p.s. Beth, your stuffed mushrooms sound SO GOOD right now. *stomach growling* Dang, it is time for dinner! :D
