Peach Oatmeal Muffins....

I decided to give this a try last night and it was delicious! I followed the recipe on the box but instead of using mini muffin tins I put all the batter in a 6oz corning ware bowl (custard size) and baked it for 22 minutes @ 350 degrees. The end result was a very tasty dish that was similar to both a spice cake and a bread pudding. I would highly recommend this idea to anyone looking for the satisfaction of bread or cake without any of the guilt!!!! Not at all mushy or undercooked, YUM!

I'm gonna make it today, with maple oatmeal, in an 8oz quiche pan :) mmmmmmmmm can't wait!! mmmmmm mmmmm

I made this recipe with all of the oatmeal varietys except the maple and I can vouch that they all taste GREAT!!!

1 packet oatmeal (I love the peach)
1/8 tsp baking powder
1/4 tsp vanilla
1/2 tsp splenda
dash of cinnamon
1/3C water

mix dry ingredients and add water and vanilla put in a 6oz corning ware dish sprayed with PAM and put in a preheated oven at 350 degrees for 22-25min

I lost the original recipie but this is how I did it today and it came out right. I also added a dash of Molly McButter to mine.

Musicalmomma also recommends spraying it lightly at the end with I Can't Believe It's Not Butter spray

Well, I tried it and....it was amazing! Such a treat. I had it for breakfast with my coffee and it was wonderful. I sprayed some ICBINB on it and WOW!

I think I'll try it with the apple oatmeal next and add some apple pie spice to it. :bib:

hahaha...Lisa, you are a sweetie pie and I thank you. And yes, I am a joy and uhm, a gift and sometimes full of chit and all that and I appreciate the kudos but in all honesty the recipe is on the peach oatmeal box. I just modified it a little bit and put it in the corning ware bowl.

Ok you all got me interested. I tried it last night and all I can say is YUM! I used the apple since I don't have any peach. My question is do you think this could be made ahead of time and eatten later? I don't have a lot of time for baking so if I made more than one at a time would they still be good the next day or later in the day just reheated in the microbox?

Any thoughts?

Don't do it!!! I talked to Marsielles and she made more than one and went to have one later and she said something was wrong with it but for the life of me I can't remember what is was. SO please wait and I am sure she will reply but she is out doing the theme park thing today so it will probably be tonight. It may not even have been that bad but before you waste any MF meals I would wait for her response
