My Favorite Meal with Pictures

I just love this, reminds me of chocolate graham cracker pie.

Crust:

1 packet oatmeal - (I use apple cinnamon)
1 packet splenda
1/2 tsp baking powder
Any spices you might want to add.. I use cinnamon & apple pie spice
Just enought water to make it stick together (you want it very thick)

I use a jumbo muffin pan sprayed with pam. Each packet will make 2 muffins. Separate mixture into 2 halves and put into two muffin tin spots. Press with fingers up the sides and bottom. So I used 3 Oatmeal packets to make the 6 you see in this picture. I also make one packet at a time. It is easier to divide mix in half instead of all 3 packets by 6. Bake at 350 for 10 min or so. Then I take out and gently make sure oatmeal comes out of tin. (make sure you use enough pam or they will stick and not want to come out). I then shut the oven off and put them back in for 5 min just to crunch them up a bit.

Then I make 1 package of Chocolate Pudding. I use a little under 4oz of water because you want the pudding thick so it stays in the cup.

So here is the breakdown. You use 1 oatmeal cup and 1/2 of the chocolate pudding mixture per meal. So every pudding packet you make equals 2 meal.

Here is what it looks like (cool whip, not recomened but I use just a small dalop) :)

Bikipatra,

Stear away from the cool whip and it is 100% compliant. It does taste really good though and it is hard to just eat one if that is what you mean. But it is really filling. I need my sweets and this satisfies any sweet craving I have.

I'm a little slow, Lori. If I wanted to just make 2 of them.....I could use 1 package of oatmeal and 1 package of pudding, right? Then each muffin would still count as 1 meal.

This sounds great......I sure hope I have some pudding left. OOOOOHHHHH YUMMY!

Yes you are right Donica.

Your one packet of oatmeal will make 2 muffins. Your packet of pudding just split in half. One muffin and half the pudding equal one meal.

oh my gosh!!! I just send out my apple cinnamon oatmeal in a trade this morning!!!! I have peach though!! what kind of pudding is this?

The recipe will work with any of the Medifast oatmeal and any of the Medifast Pudding. I use cinnamon oatmeal and chocolate pudding.

Lori~ I just wanted you to know I made this last night and it was delicious. :bib: I used the maple & brown sugar oatmeal. I'm planning on making this for my superbowl party (just for me, of course)! This way I get a special treat, too.

I just made these tonight and froze them for tomorrow and the next day.

I made them in mini muffin pans since I left my other ones at my mom's, but it worked okay. It made 3 per serving, so 6 mini muffin cups per package of oatmeal. I did it in peach and the apple. One was banana pudding with macadamia nut flavoring and the other half was chocolate coconut pudding.

I think the mini ones will work better for me since I eat breakfast at school and I can jsut do a 1-2 bite per instead of breaking out the spoons.

Thanks for the reminder; I haven't made these in over a year!! If anyone is pondering the baking thing, go for it. In total with baking and prep I think it was 15 minutes or so.
Don't really care as long as everything's better than yesterday was...

Tried these last nite, and they are really GOOD! :eat: However, being overtired and a little hypoglycemic, I did the math wrong and wound up eating 2 instead of 1 - DOH! I was wondering why I was so STUFFED afterward - 1 would have been just right!
