Fav L&G?...

Postby KellyC » September 16th, 2007, 4:29 pm

I'm trying to make a month long menu in advance, and I don't have alot alot of time to go through the Lean Cuisine section to find.. That sounds like I'm just being super lazy, but in 2 days I start my 2nd job and will be working from 8am to 1030pm mon-fri.

So tell me, what is your very very favorite L&G recipe?

I'll share too:

2c baby romaine or mixed baby greens with 1/2c tomato or cucumber, 2tbsp japanese vinaigrette and a sprinkle of fresh grated parmesan
1/2c (minus about a tablespoon to make up for the parmesan in the salad) cottage cheese
3.5oz (bout half a breast) chicken, pounded into medallions and grilled or flashed in a frying pan with montreal chicken seasoning and a drop of olive oil so it doesn't stick.

Nova's Mexican Chicken is good:

Mike's (me) Zucchini Pie

Also, my Italian Meatball Stew
http://www.makemethinner.com/forum/viewtopic.php?t=10411

I do alot of meals like the stew and just use chicken or another meat instead of making the meatballs as well.

and.. oh yeah, my Parmesan Chicken ;)

I've also done this noodle casserole with TUna and as a Spaghetti type thing

Enjoy.

So far, I haven't tried a lot of recipes yet (I'm still afraid I might get to liberal with condiments, cheese, etc. I AM a cook, ya know...that's how I got in this predicament!)...However, the most filling thing that I've had (thanks to Mike) is to have my 3/4 cup of egg beaters with 1/4 cup of shredded cheese and 2 deli thin slices of ham to make a scrumptious omelette that I put a little salsa on top with steamed broccoli on the side.

The two days I did that particular recipe, I dropped the quickest in weight. Perhaps it is because I was so careful to measure it out?? I believe I could eat that every day of the week, changing up my veggie selection, cheeses and meats....yummy...

Most of the time I do very simple and the same thing over and over......I love it and am not bothered a bit by the repetition...

Mixed lettuce greens, few fresh veggies diced, tomatoes and baked chicken breast with a light ranch dressing. Tossed in a big bowl and oh yum!

I do almost the same thing, but I use mushrooms and sometimes rather than ranch I use Wishbone salad spritzers.

Ditto. I don't mind repetition and chicken breast over a bed of organic baby greens is my absolute fav. dish. When I use salad spritzers I add crumbled feta cheese to the salad otherwise I use my own balsamic/olive oil blend.

I do enjoy a grilled steak on occasion too. With it I grill a seasoned medley of summer squash, zucchini, onion, peppers and celery.

1 Portobello mushroom with 2 slices of tomato and low fat provolone cheese with balsamic vinagrette, put under the broiler for a minute or two. yummy!!! (you could use chicken breast on it too!)

So far my 2 favorite things are like my wife the omelet. I tried 2 cups of egg beaters with some salsa but oh my goodness that was just way too much food. And also we cut zucchini and squash up real thin and browned some lean ground beef added a little spaghetti sauce to the beef and put it over the veggies almost fooled myself in to believing I was eating a big plate of spaghetti.

We have a rotating slicer/salad shooter thing that has an attachment to make julienne. I used this on zucchini and did a similar thing. It actually looked and felt like eating spaghetti.
