Made this last night when I was cleaning out my pantry, and it turned out fabulous. I have to make it again soon.
3 chicken breasts
1 can diced tomatoes
2 green chilis
2 TBSP chili powder
1 tsp cumin
hot sauce
Sprayed a large, frying pan with non-stick spray and cooked the chicken breasts 5-7 minutes/side, just enough to put some brown on them. Added can of tomatoes, chilis, and spices, turned the heat to simmer, put a lid on the pan, and left it alone for 20 minutes. I realized when I came back that my tomatoes were sticking, so I deglazed with some water and about a half-cup of chicken stock I had on hand. Pulled the chicken apart and let it stew some more (5-10 minutes).
The tomatoes had caramelized and the flavors blended wonderfully. Had 6.5 oz with a half oz of Mexican shredded cheese and it was delicious.
I had a little less salad to account for the tomatoes in the chicken, but they had really cooked into little more than flavoring by that point. |

you are TOO funny!!!! sure, come on in from SF to dallas for my leftovers!!! i used to live in Monterey, too, but so grateful to not have to pay the cost of living there, which I am sure you and your DW totally understand!
anyway, my boss gave me a 20# turkey!! and i ate t-day at friends' home, so now i have a huge turkey to figure out how to use! lol ~ guess this recipe takes care of a lot of it!  |

WOW this was amazing!! Wifey made this for us tonight and it was awesome!! Thanks for the recipe Nova!! This is a must try recipe for everyone! I think your recipe though was missing salt so don't forget to add some salt too!  |

| That recipe sounds delicious but I am not ready for such delicious food yet. My lean and green of salad and some tuna or lowfat cottage cheese tastes good enough after a day of supplements. I am afraid I would overindulge if I had something too tempting. |

True, but I always add salt to the food when it's on my dish. I like food salty, and I don't like to add it when cooking for fear of oversalting for other people. |

i wanna make this tonight but their are three of us on medifast and i just wondered how id adjust this for three people. the chicken i have out and defrosting but wasnt sure about how much of the other stuff to use
if anyone can help id appreciate it

Many times, depending upon the size, chicken breasts are usually large enough (boneless) to make the 7 oz for your lean. As for the green, you probably would be okay to have 2 cups of salad or a cup of cooked veggies in addition to the chili and tomato from dish.

thank you very much mike i was thinking that but wanted to check . im using chicken breast tenderloins though so it takes 3 or 4 to get 7oz cooked chicken
