I made this with slight modification for our dinners the next couple of days. I increased the protein and the veggies a bit. I added a bit of spaghetti sauce and 1/2 C cottage cheese, 1 C. chopped tomatoes. It all measured out to 6 servings. The sauce and tomato gives it a different italian taste than my original recipe. So, now there is "original Recipe" and "Marinara Style" icon_wink.gif

just wanted to chime in here to let you know how much Brian and I LOVE this recipe. It's one of our favorites!

we've tried the "original" recipe and we've tried it with some Walden Farms Marinara for more of the Italiano taste...both are magnifico!

Thanks sooo much for sharing this recipe! I made it tonight as something I could look forward to, as I'd made homemade spaghetti for my kids. I made the pie without sauce, but then had about 3 T. of meat sauce on my plate that I used to sorta dip in. It was so delicious!

Mike, That was awesome! I am so tempted to hog down the whole thing.... and maybe i can! I didn't use 4 c of zucchini, and i added mushrooms.... threw a piece of grilled chicken next to it and Wha-Lah!! eatbowl.gif That was sooooo yummy! Definitely will be doing that again and trying your 'marinara' version as well! Question for ya, though.... i'm 2 weeks into the program.... i was going to use the ff mozz, but it doesn't melt good at all, so i got the lf stuff, is this gonna hold up my progress at all??? icon_eek.gif I definitely don't want that! (I sure hope not, cuz i wanna make it again and again and again!!!!)

Umm, just a bit of a reminder. This is not a replacement for your Green, its actually the entire L&G, so don't throw that piece of chicken too close to it. The egg and cheese are the protein, and the zucchini, mushrooms, onion, and whatever other veggies are your green.
As for the lf mozz, thats what I actually use. Just try to avoid the REAL stuff because the fat is too high.

Try out my other recipes too, others tend to enjoy them.

I made a variation of this recipe the other night. I didn't use any cheese, used 2 eggs, 1 1/2 cups of zucchini/onion, basil, s&p, a little garlic powder, and a few very thin slices of tomato on top. I added about a tablespoon+ of water to the egg to stretch it. That was my whole L & G and it was very filling and good.

QT, please be very careful when you try recipes. Especially early on, I would just make the amount that you are allowed to avoid that temptation. Experimenting with the l&g may be best later when you are comfortable with the program. Just mho.

Thanks for the recipe. This sounds really good, and I'll be making it for the fam (all skinny boys) soon. I've made a recipe similar to your marinara version using eggplant, yellow squash, zucchini, mushrooms, peppers and onions for the veggies. icon_biggrin.gif

Thanks for the advice, everyone..... I guess I didn't realize that it was the whole L&G... so i probably went over my limits last night w/ the chicken... I did use egg whites though vs. whole eggs, if that makes a difference? huh.gif next time, i will half the recipe for a single serving and maybe add tomatos and know that it is the whole meal and won't feel guilty for eating all of it icon_lol.gif

Will definitely try your other recipes, Mike... i did have a great idea for some sausage w/ mushrooms, onions, and tomatoes chopped up and baked in a portabella cap topped w/ a little lf cheese... and i found some lean turkey sausage to use! I'll let you know how it turns out and post the recipe if its a success!

I love to cook and MF has realllllly made me appreciate that L&G meal!!!

The L&G gives me the opportunity to be creative, and I enjoy doing so.
I have yet to make something I don't like, and well, lets just say, I have never had a problem making food I didn't like. That's what got me in trouble before anyways.

I FINALLY got sick of my usual meals yesterday, and I used this to come up with my own tasty treat. My requirements are somewhat different these days, so I won't go with specifics. But mine involved Egg Beaters (and real eggs because I ran out of defrosted Egg Beaters), spinach with garlic, and low-fat Laughing Cow cheese (garlic and herb). I'll be making this again when I'm home on Saturday.

WOW !! This sounds so delicious. I didn't finish reading the whole thread, but I certianly want to try this recipe.

We just got a new range icon_cool.gif (and switched from electric to gas as well). It has 5 burners and 2 ovens icon_mrgreen.gif . And, I am *so* excited to try out some new things with this beautiful instrument... hee hee.

Yeah, I think Walker will love it icon_smile.gif. I did see the parmesan crusted chicken recipe, too, and I want to try that as well. When I first started MF I was afraid to really enjoy cooking still, or something. I felt like I needed to make less of it altogether, so, I didn't really try much other than satueeing veggies and the hubby would grill some meat.

But, I do *love* cooking and now that I have some new tools (and a little more perspective on my MF adventure icon_razz.gif ), I have a desire to try some yummy but MF compliant things out.

I want to try some kind of mock eggplant parmesan/lasagna type of thing (the eggplant would be in place of the pasta).

What fun !! icon_smile.gif.

So MIke, please forgive my stupidness... if I fixed this according to your measurements and had half of it, that would equal an L&G??

I just want to be sure. I am heading out to buy these ingredients and trying it tonight with some maters & shrooms added -- sounds absolutely wonderful!!!! And what a wonderful change of pace from chicken & veggie icon_smile.gif
