This is not a new recipe, but I thought some newbies may enjoy it. I have tweaked it just a little to make it more of a sweet bread.

1 pkg MF oatmeal (any flavor)
1 pkg MF eggs
1/2 tsp baking powder
1 tblsp ground flax meal
1/8 tsp Splenda
1/4 tsp lemon or vanilla extract
following spices to taste: use what you like, part or all of them
cinn
pumpkin pie spice
nutmeg


4 Tbls water

Mix all ingredients, add water and form into 2 small mounds on a cookie sheet. Smooth the tops.
Bake for 10-11 min and then put under broiler for 1-2 min just to barely brown top.
1 "bun" is a meal. The 2nd bun stores nicely in a baggie and travels well for the next day.

I like to slice mine in half and add 1/2 wedge of Laughing Cow light cheese. Nutrition support said this is OK and so is the flax meal. Count them as condiments.

I don't eat this often, more as a treat.

I am adding this in to try it out tonight! I am trying to gather recipes to try to have so when school starts up I can have something in my room close by. Question:

350 degrees or higher??

Is the final product dry/crumbly or moister? Thinking about putting that apple jelly in a side cup to travel with.

375 degrees.

It is the texture of a very firm muffin/bread.

Thanks for your tweaking this recipe and research about the flax and L.C. cheese, this is a treat I really enjoyed with my tea.

With all the good things that are in flax seed/meal, I put some in my little guy's buckwheat pancakes as well and he gobbled it up.
